My oldest daughter is sick today because she threw up in the middle of the night. So not only are we taking it easy today, I’m limiting her food intake in the hopes of preventing another bout of the vomiting. So far it’s working.
So at lunchtime when she said she was hungry, I asked,
“Do you want me to make my chicken noodle soup?”
“Yeah!!!!” came both my girls in unison, even the one who’s not sick . . . yet.
I actually laughed out loud at their answer. Not because I’m tickled that they love one of my “recipes” (which does please me), but because “my chicken noodle soup” was a concoction I made when my other daughter was home sick a couple months ago and we didn’t have ANYTHING in the house except macaroni and bouillon cubes. But my daughter loved it so much that she bragged to my oldest daughter the moment she got off the bus that she got to have Mommy’s special chicken noodle soup.
So to come full circle, my oldest daughter is now sick and was thrilled when I offered to make her “my chicken noodle soup.” As you probably guessed, my use of quotes around “recipe” and “my chicken noodle soup” is my attempt to use those words loosely! However, I feel compelled to share how I make it with you because my girls absolutely love it and it’s the easiest chicken noodle soup . . . EVER!
Here’s What You Need to Make My Chicken Noodle Soup:
- Macaroni
- Chicken bouillon cubes
- Water
Here’s How You Make My Chicken Noodle Soup:
1. Cook the macaroni in one pot and then drain it.
(I used half a box of elbows because that’s what we had. We seriously need to grocery shop more often.)
2. Add four cups of water and four bouillon cubes to another pot and bring to a boil.
3. Scoop macaroni into a soup bowl and add the chicken broth created from the bouillon cubes.
Not only is this chicken noodle soup ridiculously easy, it’s a great way to rehydrate a sick kid because it’s made of clear liquids and only a little macaroni. (Very little macaroni if you haven’t gone grocery shopping in awhile.) Since my daughter and I aren’t sick, yet, we added grated Parmesan cheese to ours. It was surprisingly good!

I make a mean chicken soup - But mine takes much longer than this. One thing my kids LOVE is when I use gnocchi instead of noodles to make it more like chicken and dumplings. They fight each other for the last dumpling in the pot.
It’s so funny when our ‘accidental recipes’ become their favorites! That’s happened to me quite a few times! Perhaps half the fun (and reason they love it so much) is the digging in the pantry and ‘concocting’ stuff!
What a simple recipe! It sounds yummy, too! I printed it out to keep on hand! I know, you’d think I’d just be able to remember it…We won’t even GO there! LOL!
