My second grader made this recipe at school and couldn’t wait for us to make it at home! My first thought was . . . I can wait because I don’t like pumpkin pie, but her enthusiasm was so adorable I decided to give it a try. I have to admit I was pleasantly surprised! I stand corrected. THIS pumpkin pie I like! Of course, “pie” would be an overstatement. It’s more like a pumpkin pudding mixture in a dixie cup. Hey, but it’s yummy and great for kids to make.
Here’s What You Need to Make Upside-Down Pumpkin Pie:
- 1 package instant vanilla pudding
- 2 cups milk
- 1/4 cup pumpkin pie filling
- 1/4 tsp. pumpkin pie spice
- Crushed graham crackers
Here’s How to Make Pumpkin Pie in a Dixie Cup:
1. Stir the vanilla pudding and milk together until the mixture is thick.
2. Stir in the pumpkin filling and pumpkin spice.
3. Spoon pumpkin pie mixture into cups.
At my daughter’s school they used dixie cups, but I used glass dessert dishes instead.
4. Crush graham crackers and sprinkle on top of the pumpkin pie mixture.
This is seriously the easiest pumpkin pie you will ever make!
